    Sauté Vegetables

    In a large pot, heat olive oil over medium heat. Add diced onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are softened.

    Add Garlic and Other Vegetables

    Stir in minced garlic and cook for an additional minute. Then, add diced zucchini, chopped green beans, and the canned tomatoes (with juice).

    Add Broth and Seasonings

    Pour in the vegetable broth and season with dried oregano, dried basil, salt, and black pepper. Bring the mixture to a simmer.

Cooking

    Add Pasta

    Once the soup reaches a simmer, add the pasta. Cook according to package instructions, usually about 8-10 minutes, until pasta is al dente.

    Add Spinach

    In the last 2 minutes of cooking, stir in the chopped spinach until wilted.

    Serve
