Method

Making the Cannoli Shells

  1. 1

    Mix Dry Ingredients

In a large bowl, whisk together the all-purpose flour, granulated sugar, cocoa powder, and salt until well combined.

  2. 2

    Incorporate Butter and Egg Yolks

Add the unsalted butter and mix until the mixture resembles coarse crumbs. Then, add the egg yolks and mix until incorporated.

  3. 3

    Add Liquids

Stir in the white wine (or vinegar) and water, mixing until the dough comes together. If the dough is too crumbly, add a little more water, one teaspoon at a time.

  4. 4

    Knead the Dough

Transfer the dough to a lightly floured surface and knead for about 5 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

  5. 5

    Roll Out Dough

After resting, divide the dough into quarters. Roll out one quarter to about 1/8 inch thickness using a pasta machine or rolling pin.

  6. 6

    Cut and Shape the Shells

Cut the rolled dough into circles (about 4-5 inches in diameter) using a cookie cutter. Wrap each circle around a metal cannoli tube, sealing the edges with a little water.

  7. 7

    Fry the Shells

Heat vegetable oil in a deep skillet to 350°F (175°C). Fry the prepared shells in batches until golden brown, about 2-3 minutes. Remove and drain on paper towels.

Preparing the Cannoli Filling

  1. 8

    Combine Ingredients

In a mixing bowl, combine the ricotta cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.

  2. 9

    Add Chocolate Chips

Fold in the mini chocolate chips and chopped pistachios (if using) gently until evenly distributed.

  3. 10

    Chill the Filling

Cover the filling and refrigerate for at least 30 minutes to allow the flavors to meld.

Assembly and Serving

  1. 11

    Fill the Shells

Once the shells are cool, carefully remove them from the tubes. Use a pastry bag to pipe the filling into each shell until filled.

  2. 12

    Garnish and Serve

Dust the filled cannoli with powdered sugar and drizzle with melted chocolate if desired. Serve immediately for the best texture.
