Method

Preparing the Marinade

  1. 1

    Mix the Marinade

In a small bowl, whisk together olive oil, lemon juice, garlic powder, paprika, salt, and black pepper until well combined.

  2. 2

    Marinate the Fish

Place the selected fish fillets or steaks in a shallow dish and pour the marinade over them. Ensure the fish is fully coated. Cover and refrigerate for at least 30 minutes.

Grilling the Fish

  1. 3

    Preheat the Grill

Preheat your grill to medium-high heat (about 375°F to 400°F).

  2. 4

    Grill the Fish

Remove the fish from the marinade and place it on the grill. Grill each side for about 4-6 minutes, depending on the thickness of the fish, until it’s opaque and flakes easily with a fork.

  3. 5

    Garnish

Once cooked, remove the fish from the grill and sprinkle with chopped fresh parsley before serving.

Baking the Potatoes

  1. 6

    Prepare the Potatoes

Preheat your oven to 425°F (220°C). Scrub the baking potatoes under running water and dry them. Pierce each potato several times with a fork.

  2. 7

    Bake the Potatoes

Place the potatoes directly on the oven rack and bake for about 45-60 minutes or until tender when pierced with a fork.

  3. 8

    Serve the Potatoes

Once baked, remove the potatoes from the oven. Cut a slit on the top of each potato and fluff the insides with a fork. Add butter, sour cream, chopped chives, and salt to taste.
