Preparing Chicken and Mushrooms

Marinate the Chicken
In a bowl, mix olive oil, minced garlic, salt, and black pepper. Add the boneless chicken breasts and coat them well. Let marinate for at least 30 minutes.

Grill the Chicken
Preheat the grill to medium-high heat. Grill the marinated chicken breasts for about 6-7 minutes on each side or until fully cooked (internal temperature should reach 165°F).

Making the Cheese Sauce

Prepare the Sauce
In a saucepan over medium heat, melt the butter. Stir in the flour to create a roux and cook for about 1 minute. Slowly add the heavy cream while whisking continuously until the sauce thickens.

Add Cheese
Remove the saucepan from heat and stir in the smoked cheese until melted and smooth. Season with salt and black pepper to taste.
Cooking the Pasta

Boil the Pasta
Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
Assembly

Combine and Serve
On a plate, place a serving of pasta, top with the grilled chicken, sautéed mushrooms, and drizzle the smoked cheese sauce over everything. Serve hot.
