    Prepare the Ingredients

    Chop the vine ripened tomatoes and onion. Mince the garlic cloves. Set aside.

    Season the Beef

    Sprinkle salt, black pepper, and dried oregano on both sides of the filet of beef tenderloin.

Cooking

    Sear the Beef

    In a large skillet, heat the olive oil over medium-high heat. Add the filet of beef tenderloin and sear for about 3-4 minutes on each side until browned. Remove from the skillet and set aside.

    Sauté the Vegetables

    In the same skillet, add the chopped onion and minced garlic. Sauté for about 2-3 minutes until the onion is translucent.

    Add Tomatoes

    Add the chopped vine ripened tomatoes to the skillet, stirring to combine. Cook for an additional 5 minutes until the tomatoes soften.

    Assemble the Dish

    Return the seared filet to the skillet, spooning the tomato mixture over the top. Sprinkle mozzarella cheese and Gino's special bread crumbs over the filet.

Finishing Touch

    Bake

    Preheat the oven to 375°F (190°C). Transfer the skillet to the oven and bake for 15 minutes, or until the cheese is melted and bubbly.

    Garnish

    Remove the skillet from the oven, sprinkle with fresh basil before serving.
