Preparing the Chicken Shish Kabob

    Marinate the Chicken

    In a large bowl, combine olive oil, garlic powder, paprika, salt, black pepper, and lemon juice. Mix well. Cut the chicken breasts into 1-inch cubes and add them to the marinade. Mix until the chicken is well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for best results.

    Prepare the Vegetables

    While the chicken is marinating, chop the onion, bell pepper, and mushrooms into bite-sized pieces. Set aside.

    Assemble the Kabobs

    Soak wooden skewers in water for 30 minutes to prevent burning. Thread the marinated chicken, onion, bell pepper, and mushrooms onto the skewers, alternating between chicken and vegetables until all ingredients are used.

    Grill the Kabobs

    Preheat the grill to medium-high heat. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally until the chicken is cooked through and has nice grill marks. The internal temperature of the chicken should reach 165°F (75°C).

    In a large salad bowl, combine mixed greens, diced cucumber, diced tomatoes, and sliced red onion.

    In a small bowl, whisk together olive oil, red wine vinegar, salt, and black pepper until combined.

    Toss the Salad

    Pour the dressing over the salad ingredients and toss gently until everything is well coated.
