Prepare the Rice

    Cook the Rice

    In a large saucepan, bring the chicken broth to a boil. Add the Arborio rice and a pinch of salt. Reduce heat to low, cover, and simmer for about 18-20 minutes until the rice is tender and liquid is absorbed. Remove from heat and let it cool slightly.

    Add Cheese and Eggs

    Once the rice has cooled, stir in the grated Parmesan cheese and two beaten eggs. Mix well and set aside.

Prepare the Filling

    Cook the Meat

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent. Add the ground beef, salt, and pepper, cooking until the meat is browned.

    Add Sauce and Peas

    Stir in the tomato sauce and frozen peas. Simmer for 5-7 minutes until heated through. Remove from heat and let the filling cool.

Form the Arancine

    Shape the Balls

    Take a handful of the rice mixture and flatten it in your palm. Add a spoonful of the meat filling in the center, then mold the rice around the filling to form a ball. Repeat until all rice and filling are used.

Bread the Arancine

    Prepare Breading Station

    In one bowl, add the flour. In another bowl, beat the two eggs with milk. In a third bowl, place the breadcrumbs.

    Coat the Balls

    Roll each rice ball in flour, then dip in the egg mixture, and finally coat with breadcrumbs. Place on a baking sheet and refrigerate for 30 minutes to set.

Fry the Arancine

    Heat the Oil

    In a deep pot, heat the vegetable oil to 350°F (175°C).

    Fry the Balls

    Carefully add the breaded rice balls to the hot oil in batches. Fry until golden brown, about 4-5 minutes. Remove and drain on paper towels.
