Cook the Pasta
Bring a large pot of salted water to a boil. Add the angel hair pasta and cook according to package instructions until al dente, about 4-5 minutes. Drain and set aside.
Crawfish Sauce Preparation

Sauté the Aromatics
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

Add Crawfish Tails
Stir in the crawfish tails and cook for about 2-3 minutes until heated through.

Create Creamy Sauce
Pour in the heavy cream and bring to a gentle simmer. Add the Cajun seasoning, black pepper, and half of the grated Parmesan cheese. Stir to combine and allow to thicken slightly for about 5 minutes.

Finish with Parsley
Remove from heat and stir in the chopped parsley. Set aside.
Tomato Sauce Preparation

Sauté the Vegetables
In another skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and bell pepper, sautéing for about 5 minutes until softened.

Add Tomatoes and Seasonings
Stir in the canned diced tomatoes, oregano, basil, salt, and black pepper. Simmer for 10 minutes to meld the flavors together.
Combine and Serve

Combine Sauces
In a large serving bowl, combine the crawfish sauce and tomato sauce. Mix well.

Serve with Pasta
Add the cooked angel hair pasta to the sauce mixture and toss gently to coat. Top with the remaining Parmesan cheese and serve immediately.
