    Prepare the Pie Crust

    Preheat your oven to 375°F (190°C). Roll out the pie crust and fit it into a 9-inch pie dish. Prick the bottom with a fork and blind bake for 10 minutes. Remove from oven and set aside.

    Sauté the Vegetables

    In a skillet, heat olive oil over medium heat. Add diced onion, bell pepper, and minced garlic. Sauté for 3-4 minutes until softened. Add zucchini and spinach, cooking for an additional 2-3 minutes. Season with salt and black pepper. Remove from heat and let cool slightly.

    Prepare the Egg Mixture

    In a mixing bowl, whisk together the eggs, milk, and heavy cream until well combined. Stir in the grated asiago cheese.

    Combine and Bake

    Add the sautéed vegetables to the egg mixture, stirring well to combine. Pour this mixture into the prepared pie crust. Bake in the preheated oven for 35-40 minutes until the custard is set and lightly golden on top.

    Prepare the Side Salad

    While the quiche is baking, toss together mixed greens, cherry tomatoes, and sliced cucumber in a bowl. Drizzle with balsamic vinaigrette just before serving.

    Once the quiche is done, let it cool for a few minutes before slicing. Serve warm alongside the fresh side salad.
