Prepare the Chicken
In a bowl, marinate the chicken thighs in buttermilk for at least 30 minutes. In another bowl, mix flour, salt, and black pepper.

Fry the Chicken
Heat cooking oil in a deep fryer or large skillet. Dredge the marinated chicken thighs in the seasoned flour and fry until golden brown and cooked through, about 6-8 minutes per side. Drain on paper towels.

Make the Slaw
In a large bowl, combine shredded cabbage, diced green apple, and crumbled gorgonzola cheese. Toss with buffalo sauce and season with salt and pepper to taste.

Assemble the Sandwich
Toast the burger buns lightly. Place a fried chicken thigh on the bottom half of each bun, top with gorgonzola apple slaw, and add sliced tomato. Close the sandwich with the top half of the bun.
