    Prepare the Chicken

    Preheat your oven to 375°F (190°C). Rub the half chicken with olive oil, and season generously with salt, black pepper, and garlic powder. Place the chicken on a roasting pan.

    Roast the Chicken

    Roast the chicken in the preheated oven for about 1 hour, or until the internal temperature reaches 165°F (74°C) and the skin is crispy.

    Prepare the Whipped Potatoes

    While the chicken is roasting, peel and chop the potatoes. Boil them in salted water until tender, about 15-20 minutes. Drain and return to the pot. Add butter and milk, and whip until smooth. Season with salt to taste.

    Prepare the Brussels Sprouts

    Trim and halve the Brussels sprouts. Toss them with olive oil, salt, and pepper. Spread them out on a baking sheet and roast in the oven for the last 20-25 minutes of the chicken's cooking time, until crispy and golden.

    Make the Mustard Demi-Glace

    In a small saucepan, combine chicken broth, honey, and Dijon mustard. Bring to a simmer and reduce until slightly thickened, about 5-10 minutes. Whisk in mustard to taste.

    Plate the roasted chicken with a generous scoop of whipped potatoes and crispy Brussels sprouts. Drizzle with the mustard demi-glace before serving.
