Make the Dough
In a large bowl, whisk together the flour, salt, and sugar. Cut in the butter until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, mixing until the dough holds together. Divide the dough into two discs and wrap in plastic wrap. Refrigerate for at least 1 hour.

Roll out the Dough
After chilling, preheat your oven to 375°F (190°C). On a lightly floured surface, roll out each disc to about 1/8 inch thick. Cut into circles using a 4-5 inch cutter.

Prepare the Filling
For seasonal fruit filling, choose your fruit (e.g., apples, berries, peaches). For each cup of fruit, mix with 2 tablespoons of sugar and 1 tablespoon of cornstarch. Let sit for 10 minutes.

Assemble the Hand Pies
Place about 1 tablespoon of filling on one half of each dough circle. Fold the other half over and crimp the edges with a fork to seal. Cut small slits on top of each pie for steam to escape.

Bake the Hand Pies
Place the hand pies on a baking sheet lined with parchment paper. Bake in the preheated oven for 25-30 minutes or until golden brown. Let cool slightly before serving.
