    Prepare the Potatoes

    Peel and chop the potatoes. Boil in salted water until tender, about 15-20 minutes. Drain and return to pot.

    Mash the Potatoes

    Add butter and stone ground mustard to the potatoes. Mash until smooth and creamy. Adjust seasoning with salt and pepper. Keep warm.

    Prepare the Carrots

    Slice the carrots and place them in a pan with honey and a splash of water. Cover and cook over medium heat until tender, about 10 minutes.

    Cook the Filets

    Season the filet pieces with salt, pepper, and fresh thyme. Heat olive oil in a grill pan over medium-high heat. Sear the filets for about 4-5 minutes on each side for medium-rare.

    Make the Red Wine Demi-Glace

    In the same pan, add red wine and beef broth. Bring to a boil, then reduce heat and let simmer until reduced by half, about 10-15 minutes. Strain if desired.

    Plate the Dish

    On each plate, place a serving of whipped potatoes, top with a filet, and arrange honey-glazed carrots on the side. Drizzle with red wine demi-glace.
