Prepare the Dough
In a large bowl, combine warm water and active dry yeast. Let it sit for about 5 minutes until frothy. Add in the olive oil and salt.

Mix the Dough
Gradually add the flour, one cup at a time, mixing until a shaggy dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic.

First Rise
Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

Shape the Baguettes
Punch down the dough and divide it into 2 equal pieces. Shape each piece into a long baguette and place them on a floured baking sheet.

Second Rise
Cover the shaped baguettes with a damp cloth and let them rise for another 30 minutes.

Preheat Oven
Preheat your oven to 475°F (245°C). Place a shallow pan on the bottom rack to create steam.

Score and Bake
Using a sharp knife, make several diagonal slashes on the top of each baguette. Bake for 20-25 minutes until golden brown and crusty.

Cool and Serve
Remove the baguettes from the oven and let them cool on a wire rack before slicing. Enjoy with soft cheeses or salted butter.
