Pie Crust

    Make the Pie Crust

    In a large bowl, mix flour, sugar, and salt. Cut in butter until the mixture resembles coarse crumbs. Stir in ice water until the dough comes together. Divide dough in half, shape into disks, wrap in plastic wrap, and refrigerate for at least 1 hour.

    Roll Out the Crust

    Preheat oven to 375°F (190°C). Roll out one disk of dough on a floured surface to fit a 9-inch pie pan. Place in the pan and trim excess dough.

Pie Fillings

    Prepare Apple Filling

    In a bowl, combine apples, sugar, cinnamon, and lemon juice. Pour into the prepared pie crust and dot with butter.

    Prepare Cherry Filling

    In another bowl, combine cherries, sugar, cornstarch, lemon juice, and vanilla. Pour into a separate prepared crust.

    Prepare Coconut Cream Filling

    In a saucepan, heat coconut milk, sugar, and shredded coconut. In a separate bowl, dissolve gelatin in cold water. Stir into the warm mixture and let cool slightly before pouring into the third prepared crust.

Lemon Meringue

    Make Lemon Meringue

    In a bowl, beat egg whites with cream of tartar until soft peaks form. Gradually add sugar and continue beating until stiff peaks form. Spread over lemon filling and bake at 350°F (175°C) for 10-15 minutes until golden.

Baking

    Bake the Pies

    Bake the apple and cherry pies for 45-50 minutes until the crust is golden and fillings are bubbly. Bake the coconut cream pie for 30-35 minutes. Let cool before serving.
