Prepare the Batter
In a large bowl, whisk together the flour, baking powder, baking soda, and salt.

Mix Wet Ingredients
In a separate bowl, mix the buttermilk, eggs, melted butter, and vanilla extract until well combined.

Combine Mixtures
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; it’s okay if there are a few lumps.

Add Blueberries or Chocolate Chips
Gently fold in blueberries or chocolate chips, if using.

Cook the Pancakes
Heat a non-stick skillet or griddle over medium heat. Pour 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for another 2-3 minutes until golden brown.

Serve
Serve warm with real maple syrup and your choice of bacon, sausage, or country ham.
