1. Marinate the Chicken
In a bowl, combine pineapple juice, soy sauce, brown sugar, minced garlic, grated ginger, salt, and black pepper. Add the chicken breasts and marinate for at least 30 minutes.

While the chicken is marinating, slice the green and red bell peppers and onion.
3. Cook the Chicken
Heat olive oil in a large skillet over medium heat. Remove chicken from the marinade (reserve the marinade) and cook for about 5-7 minutes per side, or until fully cooked. Remove chicken and set aside.
4. Sauté the Vegetables
In the same skillet, add the sliced bell peppers and onion. Sauté until tender, about 5 minutes.
5. Add Marinade and Combine
Pour the reserved marinade into the skillet with the vegetables and bring to a simmer. Return the chicken to the skillet, coating it with the sauce. Cook for an additional 5 minutes.
6. Serve
Serve the Hawaiian chicken over cooked rice and garnish with chopped green onions.
