    Start by trimming any excess fat from the beef belly short plate, leaving a thin layer for flavor.

    Season the Meat

    In a small bowl, mix together the kosher salt, black pepper, garlic powder, onion powder, and smoked paprika. Rub this seasoning mixture all over the beef belly.

    Marinate

    Cover the seasoned beef with plastic wrap and let it marinate in the refrigerator for at least 2 hours, preferably overnight for deeper flavor.

    Preheat your oven to 300°F (150°C).
