1. Prepare the Beef
Start by trimming any excess fat from the beef belly short plate, leaving a thin layer for flavor.
2. Season the Meat
In a small bowl, mix together the kosher salt, black pepper, garlic powder, onion powder, and smoked paprika. Rub this seasoning mixture all over the beef belly.
3. Marinate
Cover the seasoned beef with plastic wrap and let it marinate in the refrigerator for at least 2 hours, preferably overnight for deeper flavor.
4. Preheat the Oven
Preheat your oven to 300°F (150°C).
5. Sear the Beef
In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, sear the beef belly for about 4-5 minutes on each side until browned.
6. Cook in the Oven
Transfer the skillet to the preheated oven and cook for about 3 hours, or until the beef is fork-tender.
