1. Prepare the Broth
In a pot, heat the sesame oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
2. Add Vegetables
Add the sliced zucchini and shiitake mushrooms to the pot. Sauté for another 3-4 minutes until they start to soften.
3. Combine Ingredients
Stir in the gochujang and soy sauce. Mix well to combine, then pour in the vegetable broth. Bring to a boil.
4. Add Tofu
Reduce the heat to low and carefully add the soft tofu, breaking it into chunks. Simmer for 5-7 minutes.
5. Finish the Stew
Crack the egg into the stew and let it poach for about 2 minutes. Garnish with chopped green onions before serving.
