Prepare the Ice Cream
Scoop the ice cream into small balls (about 1.5 inches in diameter) and place them on a baking sheet lined with parchment paper. Freeze for at least 1 hour until solid.

Make the Mochi Dough
In a microwave-safe bowl, mix sweet rice flour, granulated sugar, and water until smooth. Cover with plastic wrap and microwave for 1 minute. Stir, then microwave for another minute, and stir again. Microwave for a final minute until the dough is sticky and translucent.

Prepare the Workspace
Dust a clean surface with cornstarch to prevent sticking. Transfer the mochi dough onto the cornstarch-dusted surface.

Shape the Mochi
Using a rolling pin, roll out the mochi dough to about 1/4 inch thick. Cut out circles (about 3 inches in diameter) using a cookie cutter. If the dough is too sticky, dust with more cornstarch.

Assemble the Mochi Ice Cream
Take a mochi circle, place a frozen ice cream ball in the center, and fold the edges over the ice cream, pinching to seal. Repeat until all ice cream and mochi dough are used.

Freeze the Mochi Ice Cream
Place the finished mochi ice cream back on the parchment-lined baking sheet and freeze for at least 2 hours before serving.
