In a large bowl, whisk together the flour, cornstarch, baking powder, salt, and pepper. Gradually whisk in the beer until the batter is smooth and well combined. Let the batter rest for about 15 minutes.

In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat the Cod
Pat the cod fillets dry with paper towels. Dip each fillet into the batter, allowing any excess to drip off.

Carefully place the battered cod fillets into the hot oil, cooking in batches if necessary. Fry for about 4-5 minutes or until golden brown and crispy. Use a slotted spoon to remove the fillets and drain them on a paper towel-lined plate.
