1. Marinate the Chicken
In a large bowl, combine the chicken pieces and buttermilk. Ensure all pieces are well coated. Cover and refrigerate for at least 2 hours, preferably overnight.
2. Prepare the Coating
In a separate bowl, mix the flour, cajun seasoning, salt, black pepper, garlic powder, onion powder, and paprika until well combined.
3. Heat the Oil
In a deep skillet or frying pan, heat the cooking oil over medium-high heat until it reaches 180°C (350°F).
4. Coat the Chicken
Remove the marinated chicken from the refrigerator. Take each piece out of the buttermilk, shaking off any excess liquid, and dredge it in the flour mixture until fully coated.
5. Fry the Chicken
Carefully place the coated chicken pieces in the hot oil, being careful not to overcrowd the pan. Fry for about 8-10 minutes on each side or until golden brown and cooked through. Use a meat thermometer to ensure an internal temperature of 75°C (165°F).
6. Drain and Serve
Once cooked, transfer the chicken to a paper towel-lined plate to drain excess oil. Serve hot and enjoy your crispy Cajun chicken!
