Chicken and Marinade
Method
Preparation and Cooking
Marinate the Chicken
In a large bowl, combine buttermilk, hot sauce, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Add the chicken thighs and ensure they are fully submerged in the marinade. Cover and refrigerate for at least 4 hours, preferably overnight.
Prepare the Frying Station
Set up a frying station with two shallow dishes: one with flour and one with the remaining spices (paprika, cayenne, salt, and black pepper).
Coat the Chicken
Remove the chicken from the marinade, allowing excess to drip off. Dredge each piece in the seasoned flour, ensuring an even coating. Shake off any excess flour.
Fry the Chicken
In a large skillet, heat oil over medium-high heat until shimmering. Fry the chicken thighs in batches for about 5-7 minutes per side, or until golden brown and cooked through (internal temperature of 165°F/75°C).
Drain and Serve
Transfer the fried chicken to a wire rack or paper towels to drain excess oil. Serve hot with your choice of sides.
