Prepare the Flatbread

In a mixing bowl, combine warm water and yeast. Let it sit for about 5 minutes until frothy. Add the flour, olive oil, and salt. Mix until a dough forms. Knead for about 5-7 minutes until smooth. Cover and let rise in a warm place for 1 hour.

Caramelize the Onions

In a skillet, melt butter over medium heat. Add sliced onions and cook slowly, stirring occasionally, for about 20 minutes until golden brown and caramelized.

Cook the Mushrooms

In the same skillet, add sliced mushrooms, thyme, and black pepper. Cook until mushrooms are tender and liquid has evaporated, about 10 minutes.

Preheat Oven

Preheat your oven to 475°F (245°C).

Assemble the Flatbread

Roll out the risen dough into a flatbread shape on a floured surface. Place it on a baking sheet. Spread the mushroom gravy, then top with caramelized onions and shredded Gruyère cheese.

Bake

Bake in the preheated oven for 12-15 minutes or until the cheese is melted and bubbly, and the flatbread is golden brown.

Serve

Remove from oven, let cool slightly, and top with pickled red cabbage before slicing and serving.
