Prepare the Pork
Trim any excess fat from the pork tenderloin and slice it into 1-inch thick medallions.

Pound the Pork
Using a meat mallet, pound each medallion to about 1/2 inch thickness for even cooking.

Set Up Breading Station
In three separate bowls, set up your breading station: one with flour, one with beaten eggs, and one with breadcrumbs mixed with salt, pepper, garlic powder, and onion powder.

Bread the Pork
Dredge each pork medallion in flour, then dip in the egg, and finally coat with breadcrumbs. Ensure each piece is fully coated.

Heat the Oil
In a large, deep skillet, heat vegetable oil over medium-high heat until it reaches about 350°F (175°C).

Fry the Pork
Carefully add the breaded pork medallions to the hot oil, frying in batches if necessary. Fry for about 4-5 minutes on each side or until golden brown and cooked through.

Drain the Pork
Once cooked, remove the pork from the oil and place on a paper towel-lined plate to drain excess oil.

Assemble the Sandwich
Toast the buns lightly. Spread mayonnaise on each bun, place a piece of fried pork on top, add lettuce and tomato slices, and close the sandwich.
