    Marinate the Pork

    In a bowl, mix olive oil, lemon juice, oregano, salt, and black pepper. Add the pork shoulder, ensuring it's well coated. Cover and refrigerate for at least 2 hours or overnight.

    Cook the Pork

    Preheat your grill or oven to 400°F (200°C). Remove the pork from the marinade and cook for about 25-30 minutes, turning occasionally, until the meat is cooked through and has a nice char. Let it rest before slicing.

    Prepare Tzatziki Sauce

    Grate the cucumber and squeeze out excess moisture. In a bowl, mix Greek yogurt, grated cucumber, minced garlic, salt, and pepper. Set aside.

    Assemble the Sandwich

    Slice the cooked pork thinly. Warm the pita bread. Layer sliced pork, tzatziki sauce, sliced tomatoes, red onion rings, and any extra toppings in the pita.
