Fish Sandwich Preparation

Prepare the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold beer or sparkling water until the batter is smooth and slightly thick.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil to 350°F (175°C). Make sure to have enough oil to submerge the fish fillets.

Coat the Fish
Pat the cod fillets dry with paper towels. Dip each fillet into the batter, ensuring they are fully coated.

Fry the Fish
Carefully place the battered cod fillets into the hot oil. Fry for about 4-5 minutes on each side, or until they are golden brown and crispy. Remove them from the oil and place them on a paper towel to drain excess oil.

Assemble the Sandwich
Toast the hamburger buns lightly. Spread tartar sauce on the bottom bun, then add a crispy cod fillet, followed by shredded lettuce and sliced tomatoes. Top with the other half of the bun.

Serve the fish sandwiches with lemon wedges on the side for a fresh squeeze of lemon juice.
