Prepare the Pie Crust
Preheat your oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until well combined. Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish. Bake in the preheated oven for 8-10 minutes, until lightly golden. Remove from oven and let cool.

Make the Mint Filling
In a large mixing bowl, beat together the cream cheese and sugar until smooth. Add the heavy cream, peppermint extract, and green food coloring. Whip until light and fluffy. Gently fold in half of the whipped topping.

Assemble the Pie
Spread the mint filling evenly over the cooled pie crust. Top with the remaining whipped topping. Refrigerate for at least 2 hours to set.

Slice the pie and serve chilled. Optionally, garnish with chocolate shavings or mint leaves.
