    Preparation

    Preheat your oven to 220°C (428°F).

    Season the Meat

    In a small bowl, mix together salt, black pepper, garlic powder, rosemary, and thyme. Rub the mixture all over the alcatra cut. Drizzle with olive oil and ensure it is well coated.

    Searing

    In a large oven-safe skillet or pan, heat a bit of olive oil over medium-high heat. Sear the alcatra on all sides until browned (about 3-4 minutes per side).

    Roasting

    Once the meat is seared, pour the beef broth into the skillet and transfer it to the preheated oven. Roast for about 45-60 minutes, or until the internal temperature reaches your desired doneness (55°C/130°F for medium-rare).

    Resting

    Remove the alcatra from the oven and let it rest for at least 15 minutes before slicing. This helps the juices redistribute throughout the meat.

    Slice the alcatra against the grain and serve with your favorite sides.
