Pastries

Method

Preparation

  1. 1

    Make the Pastries

In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.

  2. 2

Cut the unsalted butter into small pieces and add it to the flour mixture. Use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.

  3. 3

In a separate bowl, beat the eggs, then add the milk and vanilla extract. Mix well.

  4. 4

Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.

  5. 5

Fold in the fresh fruit gently.

  6. 6

Preheat the oven to 375°F (190°C). Grease or line a muffin tin with paper liners.

  7. 7

Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.

  8. 8

Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.

  9. 9

    Prepare the Yogurt Parfait

While the pastries are baking, prepare the yogurt parfait.

  10. 10

In a serving glass or bowl, layer Greek yogurt with honey and additional fresh fruit.

  11. 11

Repeat the layers until the glass is full.
