    Marinate the Pork Loin

    In a bowl, mix together minced garlic, olive oil, red wine, dried oregano, salt, black pepper, chopped rosemary, and lemon juice to create the marinade.

    Prepare the Pork Loin

    Place the pork loin in a large resealable plastic bag or a shallow dish. Pour the marinade over the pork, ensuring it's well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight.

    Preheat and Cook

    Preheat your oven to 180°C (350°F). Remove the pork from the marinade and place it in a roasting pan. Reserve the marinade for basting. Roast the pork for about 1 hour, basting every 20 minutes with the reserved marinade, until the internal temperature reaches 70°C (160°F).

    Rest and Serve

    Once cooked, remove the pork loin from the oven and let it rest for 10-15 minutes before slicing. Serve warm with your favorite sides.
