    Soak the Beans

    Rinse the dried navy beans under cold water. Place them in a large pot and cover with 6 cups of water. Soak overnight or for at least 8 hours.

    Preheat Oven

    Preheat your oven to 300°F (150°C).

    Cook the Beans

    After soaking, drain the beans and place them back in the pot. Cover with fresh water and bring to a boil. Cook for about 30 minutes, then drain again.

    Prepare the Bacon and Onion

    In a skillet over medium heat, cook the bacon until crispy. Remove, chop, and set aside. In the same skillet, sauté the chopped onion in the bacon fat until translucent.

    Combine Ingredients

    In a large mixing bowl, combine the cooked beans, bacon, sautéed onion, molasses, brown sugar, Dijon mustard, salt, black pepper, ground ginger, and apple cider vinegar. Stir well to combine.

    Bake

    Transfer the bean mixture to a baking dish. Cover with foil and bake in the preheated oven for 2 to 3 hours, until the beans are tender. Remove the foil for the last 30 minutes of baking.
