Marinade and Lamb

Method

Preparation and Cooking

  1. 1

    Prepare the Marinade

In a bowl, combine minced garlic, red wine, olive oil, chopped rosemary, thyme, salt, black pepper, and lemon juice. Mix well.

  2. 2

    Marinate the Lamb

Place the leg of lamb in a large resealable plastic bag or a shallow dish. Pour the marinade over the lamb, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 4 hours, preferably overnight.

  3. 3

    Preheat the Oven

Preheat your oven to 350°F (175°C).

  4. 4

    Roast the Lamb

Remove the lamb from the marinade and place it in a roasting pan. Reserve the marinade. Roast the lamb in the preheated oven for about 1.5 to 2 hours, basting occasionally with the reserved marinade. The lamb is done when it reaches an internal temperature of 145°F (63°C) for medium-rare.

  5. 5

    Rest and Serve

Once cooked, remove the lamb from the oven and let it rest for 15 minutes before carving. Serve with your choice of sides.
