Sausage Ingredients

Method

Sausage Preparation

  1. 1

    Prepare the Casings

Soak the natural hog casings in water for at least 30 minutes before using to soften them.

  2. 2

    Mix the Ingredients

In a large bowl, combine the ground pork, minced garlic, paprika, cayenne pepper, black pepper, salt, and chopped parsley. Mix thoroughly.

  3. 3

    Add Ice Water

Gradually add the ice water to the meat mixture, mixing until well combined and slightly sticky.

  4. 4

    Stuff the Sausages

Using a sausage stuffer, carefully fill the prepared casings with the meat mixture, taking care not to overstuff. Tie off the ends securely.

  5. 5

    Cook the Sausages

Grill or pan-fry the sausages over medium heat until fully cooked and browned on the outside, about 15-20 minutes.

  6. 6

    Serve

Let the sausages rest for a few minutes before slicing and serving. Enjoy with your favorite sides or in a sandwich.
