    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into thick slices or sticks, about 1/2 inch wide.

    Soak the Cut Potatoes

    Place the cut potatoes in a bowl of cold water and soak for at least 30 minutes to remove excess starch.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Remove the potatoes from the water, pat them dry with a towel, and carefully add them to the hot oil in batches. Fry until golden brown, about 5-7 minutes per batch.

    Drain and Season

    Remove the fries from the oil and drain on paper towels. Immediately sprinkle with salt to taste.

    Make the Aioli

    In a small bowl, mix together the mayonnaise, chili de arbol, minced garlic, lemon juice, and salt to taste. Adjust the seasoning as needed.

    Serve

    Serve the hand cut fries hot with the chili de arbol aioli on the side for dipping.
