    Prepare the Rub

    In a small bowl, combine espresso powder, brown sugar, smoked paprika, garlic powder, onion powder, salt, and black pepper. Mix well to create a spice rub.

    Rub the Pork

    Pat the pork shoulder dry with paper towels. Generously coat the pork with the espresso rub, ensuring to cover all sides. Let it sit at room temperature for about 30 minutes to absorb the flavors.

    Cook the Pork

    Preheat your oven to 300°F (150°C). Place the rubbed pork shoulder in a roasting pan and cover it with foil. Roast for 3-4 hours, or until the internal temperature reaches 190°F (88°C) for tender, pull-apart meat.

    Prepare the Butternut Squash Puree

    While the pork is roasting, prepare the chipotle-gather urban farm herb butternut squash puree. Cook the butternut squash until tender, then blend with chipotle peppers and herbs until smooth.

    Grill the Broccolini

    Toss broccolini in olive oil, salt, and pepper. Grill over medium-high heat for 3-4 minutes until slightly charred but still vibrant green.

    Make the Cocoa Demi

    In a saucepan, reduce beef stock over medium heat until thickened. Stir in cocoa powder to taste, and season with salt and pepper.

    Serve

    Slice the pork shoulder and serve alongside the butternut squash puree and grilled broccolini. Drizzle with cocoa demi before serving.
