Bolognese Sauce and Pasta

Prepare the Sauce

In a large pot, heat olive oil over medium heat. Add diced onion, carrot, and celery, sautéing until softened, about 5-7 minutes.

Add minced garlic and cook for an additional 1-2 minutes until fragrant.

Increase heat to medium-high and add ground elk, bison, and wagyu beef. Cook until browned, breaking up meat with a spoon.

Stir in crushed tomatoes, tomato paste, red wine, dried oregano, salt, and black pepper. Bring to a simmer.

Reduce heat to low and let the sauce simmer for at least 30 minutes, stirring occasionally.

Cook the Pasta

In a separate pot, bring water to a boil and cook the house made pasta according to package instructions until al dente. Drain and set aside.

Serve

Combine the cooked pasta with the bolognese sauce. Serve with grilled baguette and top with grated pecorino cheese.
