    Prepare the Grits

    In a medium saucepan, bring 4 cups of water to a boil. Add a pinch of salt and gradually stir in the Marsh Hen Unicorn Grits. Reduce heat to low, cover, and simmer for about 20-25 minutes, stirring occasionally, until thick and creamy. Remove from heat and set aside.

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the diced onion and sweet chili pepper, and sauté for about 5-7 minutes, or until the vegetables are soft and slightly caramelized. Season with salt and black pepper. Stir in chopped cilantro and set aside.

    Cook the Black Bass

    In the same skillet, add a little more olive oil if needed and increase the heat to medium-high. Season the black bass fillets with salt and black pepper on both sides. Cook the fillets for about 3-4 minutes per side, or until the fish is cooked through and flakes easily with a fork.

    Plate the Dish

    To serve, spoon the creamy grits onto a plate, top with the sautéed vegetables, and place the cooked black bass fillet on top. Garnish with a slice of lemon and sprinkle with additional cilantro if desired.
