Cooking Instructions

  1. 1

    Prepare the Vadouvan Yogurt

In a bowl, combine the Greek yogurt and Vadouvan spice blend. Mix well and season with a pinch of salt. Set aside.

  2. 2

    Grill the Veggies

Preheat the grill to medium-high heat. Toss the peppers, halved tomatoes, and cucumber with 1 tablespoon of olive oil, salt, and pepper. Grill the vegetables for about 5-7 minutes, turning occasionally until they are charred and tender. Remove from the grill and set aside.

  3. 3

    Grill the Lamb Loin

Rub the lamb loin with the remaining olive oil, salt, and pepper. Place the lamb on the grill and cook for about 4-5 minutes on each side for medium-rare, or until your desired doneness is reached. Use a meat thermometer to check the internal temperature (about 60°C for medium-rare).

  4. 4

    Rest the Lamb

Remove the lamb from the grill and let it rest for 5 minutes before slicing.

  5. 5

    Assemble the Dish

Slice the lamb loin and arrange it on a plate with the grilled vegetables. Add a generous dollop of Vadouvan yogurt on top and garnish with fresh basil.
