Crispy Octopus

    Prepare the Octopus

    Bring a large pot of salted water to a boil. Add the octopus and cook for 45 minutes until tender. Remove and let cool. Once cooled, cut into bite-sized pieces.

    Fry the Octopus

    In a bowl, toss the octopus pieces with olive oil, salt, black pepper, and cornstarch. Heat oil in a deep pan over medium-high heat and fry the octopus until golden and crispy, about 2-3 minutes. Remove and drain on paper towels.

Green Goddess Dressing

    Make the Dressing

    In a blender, combine basil, parsley, garlic, lemon juice, Greek yogurt, salt, and pepper. Blend until smooth and creamy. Adjust seasoning to taste.

Grilled Cucumber

    Prepare the Cucumber

    Slice the cucumbers lengthwise into quarters. Toss with olive oil, salt, and pepper.

    Grill the Cucumber

    Preheat a grill or grill pan over medium heat. Grill the cucumbers for 3-4 minutes on each side until charred and tender.

Amaranth

    Cook the Amaranth

    In a saucepan, combine amaranth seeds, water, and salt. Bring to a boil, then reduce to a simmer and cover. Cook for about 20 minutes until the water is absorbed. Remove from heat and let sit for 5 minutes.
