Strawberry Whipped Ganache

Prepare the Strawberries
Wash and hull the fresh strawberries, then chop them into small pieces.

Make the Ganache
In a saucepan, heat the heavy cream over medium heat until it just begins to simmer. Remove from heat and add the chopped white chocolate. Let it sit for a minute, then stir until smooth.

Combine with Elderflower
Add the chopped strawberries and elderflower cordial to the ganache. Stir gently to combine.

Chill the Mixture
Cover the bowl and refrigerate the ganache for about 1 hour, or until set but still spreadable.

Whip the Ganache
Once chilled, use a hand mixer to whip the ganache until it becomes light and fluffy.
Crumble

Prepare the Crumble Mixture
In a bowl, combine the all-purpose flour, brown sugar, oats, and salt. Mix well.

Add the Butter
Add the chilled butter cubes to the dry ingredients. Use your fingers or a pastry cutter to mix until the mixture resembles coarse crumbs.

Bake the Crumble
Preheat your oven to 180°C (350°F). Spread the crumble mixture on a baking sheet and bake for 15-20 minutes, or until golden brown, stirring halfway through.
