Preparation

  1. 1

    Prepare the Vegetables

Wash and slice the zucchini into half-moons. Finely chop the onion and mince the garlic.

  2. 2

    Prepare the Olives

Pit and slice the black olives into rings.

Cooking

  1. 3

    Sauté the Onions and Garlic

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent. Add minced garlic and sauté for an additional 1-2 minutes until fragrant.

  2. 4

    Add Zucchini

Stir in the sliced zucchini and cook for about 5-7 minutes until they start to soften.

  3. 5

    Incorporate Marinara and Other Ingredients

Pour in the sugo (marinara sauce), add capers, and black olives. Stir well to combine everything. Season with salt and black pepper.

  4. 6

    Simmer the Mixture

Reduce the heat and let the mixture simmer for about 10-15 minutes, stirring occasionally, until the zucchini is tender and the flavors meld together.
