Preparation of Artichokes

Prepare the Artichokes
Wash the artichokes thoroughly under cold water. Use a knife to trim the stems and cut the top 1 inch off each artichoke. Remove the outer leaves until you reach the tender inner leaves. Rub the cut surfaces with lemon to prevent browning.

Remove the Choke
Using a spoon, carefully scoop out the fuzzy choke in the center of each artichoke. Rinse again under cold water.
Prepare the Stuffing

Mix the Filling
In a large bowl, combine breadcrumbs, minced garlic, grated Pecorino Romano cheese, chopped parsley, chopped basil, olive oil, salt, and black pepper. Mix well until all ingredients are thoroughly combined.

Stuff the Artichokes
Gently open the leaves of each artichoke and stuff the breadcrumb mixture into the spaces between the leaves. Pack the stuffing in well, but do not force it.

Prepare for Steaming
Place the stuffed artichokes upright in a large pot. Pour vegetable broth into the pot until it reaches about halfway up the artichokes. Drizzle the tops of the stuffed artichokes with olive oil.

Cover the pot and bring the broth to a boil. Reduce heat to low and steam the artichokes for about 30-40 minutes, or until the leaves can be easily pulled off.
