Preparing the Artichokes

    Clean the Artichokes

    Rinse the fresh artichokes under cold water, then trim the stem to 1 inch from the base. Use kitchen scissors to snip off the sharp tips of the leaves.

    Prepare Cooking Water

    In a large pot, fill with water and add lemon juice and salt. Bring the water to a boil.

    Blanch the Artichokes

    Once the water is boiling, add the artichokes, cover, and steam for about 15-20 minutes until the leaves are tender. Remove from water and let cool.

Making the Stuffing

    Combine Ingredients

    In a large mixing bowl, combine the bread crumbs, grated Parmesan cheese, minced garlic, chopped parsley, olive oil, black pepper, and red pepper flakes. Mix well until all ingredients are evenly coated.

    Stuff the Artichokes

    Once the artichokes are cool enough to handle, gently spread the leaves apart and spoon the stuffing mixture between the leaves, making sure to pack it in well. Continue until each artichoke is filled.

Cooking the Stuffed Artichokes

    Preheat your oven to 375°F (190°C). Place the stuffed artichokes in a baking dish, drizzle a little olive oil over the top, and cover with foil. Bake for 30-35 minutes, removing the foil during the last 10 minutes to crisp the topping.
