    Make the Dough

    In a mixing bowl, combine all-purpose flour, granulated sugar, salt, and cocoa powder. Mix well.

    Add Wet Ingredients

    Add the egg yolk, white wine (or vinegar), and melted butter to the dry ingredients. Mix until a dough forms.

    Knead the Dough

    Knead the dough on a floured surface until smooth, about 5 minutes. Wrap in plastic wrap and let rest for 30 minutes.

    Roll and Cut Shells

    After resting, roll out the dough thinly and cut into circles using a cookie cutter. Wrap each circle around a cannoli form.

    Fry the Shells

    Heat oil in a deep pan. Fry the wrapped dough until golden brown, about 2-3 minutes. Remove and drain on paper towels.

For the Filling

    Prepare the Filling

    In a bowl, combine ricotta cheese, powdered sugar, and vanilla extract. Mix until smooth.

    Add Chocolate Chips

    Fold in mini chocolate chips and chopped pistachios (if using) into the ricotta mixture.

    Fill the Shells

    Once the shells are completely cool, use a pastry bag to fill each shell with the ricotta mixture.

    Dust the filled cannoli with powdered sugar and sprinkle with additional chopped pistachios if desired.
