Prepare the Artichokes
Trim the stems of the artichokes and remove any tough outer leaves. Cut about an inch off the top of each artichoke. Use a spoon to scoop out the fuzzy choke from the center. Rinse under cold water.

Mix the Ingredients
In a mixing bowl, combine the shrimp, prosciutto, Italian bread crumbs, minced garlic, melted butter, provolone cheese, chopped parsley, salt, and black pepper. Mix until all ingredients are well combined.
Stuff the Artichokes

Fill the Artichokes
Spoon the stuffing mixture generously into each artichoke, pressing down to pack it in tightly. Make sure to fill the center and between the leaves.
Cooking

Bake the Stuffed Artichokes
Preheat your oven to 375°F (190°C). Place the stuffed artichokes upright in a baking dish. Add about 1 inch of water to the bottom of the dish to help steam the artichokes. Cover the dish with aluminum foil and bake for 45 minutes. Remove the foil and bake for an additional 15 minutes or until the artichokes are tender and the stuffing is golden brown.
