    Prepare the Seafood Filling

    In a bowl, combine the shrimp, scallops, lobster meat, garlic, parsley, lemon juice, salt, and pepper. Mix well and set aside.

    Make the Pasta Dough

    In a large mixing bowl, combine the flour and salt. Create a well in the center, add the eggs and olive oil. Gradually mix the flour into the eggs until a dough forms. Knead on a floured surface for about 10 minutes until smooth. Cover with a cloth and let rest for 30 minutes.

    Roll and Fill the Ravioli

    Divide the dough into four pieces. Roll each piece thinly using a pasta machine or rolling pin. Place small mounds of filling (about 1 tsp each) on one sheet, then cover with another sheet of dough. Press to seal, ensuring there are no air pockets. Cut into desired shapes.

Sherry Wine Sauce Preparation

    Prepare the Sauce

    In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant. Pour in the sherry wine and bring to a simmer. Reduce the wine by half, then stir in the heavy cream, peas, and roasted tomatoes. Cook for another 5 minutes until the peas are tender.

    Bring a large pot of salted water to a boil. Add the ravioli and cook for 3-5 minutes until they float to the surface. Remove with a slotted spoon and add to the skillet with the sauce.
