Method

Preparing the Prime Rib

    Season the Prime Rib

    Rub the prime rib roast with olive oil, then season generously with kosher salt, black pepper, garlic powder, and onion powder. Make sure to cover all sides.

    Preheat the Oven

    Preheat your oven to 450°F (232°C).

    Roast the Meat

    Place the seasoned prime rib on a rack in a roasting pan. Roast in the preheated oven for 15 minutes, then reduce the temperature to 325°F (163°C) and continue cooking for about 1.5 to 2 hours, or until the internal temperature reaches 130°F (54°C) for medium-rare.

    Rest the Meat

    Once cooked, remove the prime rib from the oven and let it rest for at least 20-30 minutes before slicing. This allows the juices to redistribute.

Making the Au Jus

    Prepare the Au Jus

    In a saucepan, combine beef broth, red wine, chopped onion, whole garlic cloves, thyme leaves, and black peppercorns. Bring to a boil over medium-high heat.

    Simmer

    Reduce the heat and let the mixture simmer for about 20-30 minutes, until slightly reduced. Strain the liquid to remove solids and keep warm.

Making the Horseradish Sauce

    Combine Ingredients

    In a bowl, mix together prepared horseradish, sour cream, lemon juice, and salt to taste. Adjust seasoning as desired.

    Chill

    Refrigerate the horseradish sauce for at least 30 minutes before serving to allow flavors to meld.
