Preheat the Oven
Preheat your oven to 400°F (200°C).

Prepare the Pork Tenderloin
Trim any excess fat from the pork tenderloin and season it with salt and black pepper.

Wrap with Bacon
Wrap the pork tenderloin in the bacon slices, ensuring it is completely covered.
Making the Sauce

Mix the Sauce Ingredients
In a mixing bowl, combine the brown sugar, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, and black pepper. Stir until well combined.
Cooking

Place in Baking Dish
Place the wrapped pork tenderloin in a baking dish and pour the sauce over it, ensuring it's well coated.

Roast in the Oven
Roast in the preheated oven for about 25-30 minutes, or until the internal temperature of the pork reaches 145°F (63°C).

Remove the tenderloin from the oven and allow it to rest for 5-10 minutes before slicing it into medallions.
