Slice the Steak
Thinly slice the ribeye steak against the grain into strips.

Sauté Vegetables
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion, green bell pepper, and sliced mushrooms. Sauté for about 5-7 minutes until the vegetables are tender and slightly caramelized. Remove from the skillet and set aside.

Cook the Steak
In the same skillet, add the remaining tablespoon of olive oil. Increase the heat to medium-high and add the sliced ribeye steak. Season with salt and black pepper. Cook for about 3-4 minutes until the steak is browned and cooked to your desired doneness.

Prepare the Rolls
While the cheese is melting, slice the Italian rolls in half and lightly toast them if desired.

Assemble the Sandwiches
Spoon the cheesy steak and vegetable mixture onto the bottom half of each toasted Italian roll. Place the top half of the roll over the filling.
